Barbecue
 

COMMENTS: We are masters of fire and smoke, owning a large iron wood-smoker.  Items listed below as smoked are smoked over whole hickory logs, anywhere from 2 to 15 hours as appropriate.  We make our own barbecue sauce and Carolina vinegar sauce.  Bread/buns and condiments are included and dessert is available for an additional charge (see Desserts).

Don't hesitate to mix and match.  We can provide a quote for anything you might select.  Quantities do not necessarily allow for seconds at buffets, so please order extra if seconds are desired or if your group contains large eaters.  (As a general rule, we recommend ordering 10% extra.)

VEGETARIAN OPTIONS:  We are happy to provide tofu dogs, tofu burgers and/or turkey burgers on request.

MINIMUMS:  Prices are based upon orders of 35 or greater.  Smaller orders are welcome but are quoted on a custom basis.

CONDIMENTS

We tailor condiments to the items on the menu.  Possible condiments are ketchup, yellow mustard, brown mustard, honey-whole grain mustard, sweet & hot mustard, mayonnaise, homemade barbecue sauce, Carolina vinegar sauce, relish, grilled onions, chopped onions, pickle slices, lettuce, tomato, tomato-basil relish, tomato-cilantro-jalapeno relish, avocado-cilantro relish, homemade giardinera, and chipotle-mango chutney.
